Yesterday was uneventful. Lots of water, Chipotle Chicken Tomato Soup for lunch and almond meal/spicy chicken fingers oven baked for dinner with mixed veggies.
Today I had the day off from work and did a little bit of prep work. I made Grain Free Banana Muffins for lunch. My last batch turned out AWFUL, I don’t think I cooked them long enough.
Sunday I also ruined a batch of the Crispy Buffalo Chicken Bites. I tried substituting for the lack of eggs and they were awful.
In other new yummy news, today for dinner I cooked up spaghetti and meatballs!
Spaghetti Squash I prefer this way of cooking it up. This comes out perfect every time!
Paleo Meatballs These were so DANG yummy! I did not have coconut flour, so I substituted a bit of Tapioca Flour and just wow. So yummy. I’ll definitely be making them again! I’m going to freeze what I’ve got left.
For the sauce I used tomato sauce with italian seasoning and it was also quite good. I was worried about what squash would taste like with red sauce but I am thoroughly impressed. This will be a new staple. Kevin had his with regular spaghetti but he really enjoyed everything else about it and we both lapped it up.

In the end, it was a successful day. I did some prep work for some of my upcoming classes and have been scheduling all things wedding.
I’m thinking of doing a Whole30 snack day for the AFC Championship game this weekend or maybe for the superbowl. I’m thinking fruit tray, veggie tray, make some Dump Ranch, try again at the buffalo chicken wings and maybe some dates wrapped in bacon (A Hanscom Favorite). So we’ll see if that happens!
My progress with tea is improving vastly. I like it. I ended up having two cups at work yesterday it was just so delicious. I’m sure getting there!
